Thanks for joining me for another Nine Favorite Things post.

Iโ€™ve been looking forward to writing this post all week. I want to share with you guys all the things that are making me happy, keeping me sane, and everything weโ€™ve been up to while hunkered down at home. I will say that itโ€™s been a hard week, with some days being better than others. All in all, Iโ€™m really just trying to focus on creating amazing content for you guys. Itโ€™s truly what keeps me going and prevents me from stressing 24/7โ€ฆthough Iโ€™ve certainly had my moments of feeling scared and anxious.

But todayโ€™s post is about all the good things we have going on. Even though itโ€™s a weird time, we still have so much good to celebrate as well. Iโ€™m going to share all of my very favorite things to do at home. What I personally am cooking. And yes, you guys, Iโ€™m also going to share my favorite loungewear basics with you allโ€ฆas many of you have been asking on Instagram. So well it has been a hard couple of weeks, this post is our distraction!

Question: How have you all been passing the time and staying positive?

What have I been up toโ€ฆwell, thankfully Iโ€™m quarantined at home with a few of my favorite people. I donโ€™t know what I would do without having my mom, dad, and little sister Asher by my side during this time. We might not sleep in the same house, but I will never take being neighbors with my family (weโ€™re all on the same property) for granted again. Itโ€™s one of the greatest gifts. My brothers are a bit more spread out, with four of them in California, and my oldest brother back in Cleveland. So thatโ€™s a little hard, but everyone is staying in, staying connected through texts and Facetime, and most importantly, staying safe.

My days have been incredibly busy creating new recipes and working to share out Instagram stories for you guys. Have you been enjoying the daily step-by-step recipes on stories? Iโ€™ve been trying to develop new pantry staple recipes using the ingredients I have on hand. Weโ€™ve cut our grocery store trips down to once a week. Weโ€™re really only going when we absolutely need food. Which is very different from the norm of going daily. Itโ€™s also very hit or miss in terms of what the store will have. Thankfully weโ€™ve been able to get everything we really need. How are the grocery stores for you guys? Are you still able to get most of your usual items?

With spring officially hereโ€ฆwhich I completely missedโ€ฆbut hey guys, itโ€™s hereโ€ฆIโ€™m finding it a bit of a struggle to create pantry recipes that are also springy too. I tried my best, and I have to say, Iโ€™m excited to see what you think of weekโ€™s upcoming recipes.

And with that, coming up this weekโ€ฆweโ€™ll have a really fun Cuban inspired one skillet dinner, a fresh take on a simple flatbread, a new pantry pasta, the perfect slow cooker dinner, a colorful sweet potato dish, and finally, a fun cake thatโ€™s perfect for the upcoming Easter holiday. Lots of delicious (pantry style) recipes all coming your way.

1. everything I am most thankful for right now.

In scary, uncertain times it can be hard to remember all the good things. But Iโ€™ve found a lot of comfort in focusing on the positive things that I do have. So, I thought I would share what Iโ€™m most thankful for right nowโ€ฆ

  1. The fact that I do have my family so close and can see them every day.
  2. My mom. Yes, we both work together on HBH, but sheโ€™s been putting in some extra hours this week to help keep up with things. And even more importantly? Sheโ€™s also been my personal therapist. So thankful to have her around and to be able to work with her so closely. Itโ€™s something I take for granted, but itโ€™s truly such a blessing. Cheesy, but itโ€™s so true.
  3. My cousins Maggie and Abby, who are behind the scenes HBH team members. Theyโ€™ve been working overtime helping to keep up with all of the Instagram messages. I am so thankful for them and their hard work during these tough times.
  4. Being able to get outside every morning for a hike.
  5. My work. I know so many of you are unable to work during this time. Iโ€™m sure thatโ€™s got to be incredibly hard. Iโ€™m grateful that I work in a space that focuses on digital content and allows me to continue working during a very unusually difficult time for the world.
  6. Everyone out there still whoโ€™s working every single day to help us get our country back to normal. Doctors, nurses, pharmacists, bankers, grocery store employees, farmers, package delivery drivers (and I realize Iโ€™m missing many more!). There are so many of you still out there working, helping, and risking a lot to do so. THANK YOU!
  7. Flowers. My dad brought home the above ranunculus after his grocery run and they brightened my week.
  8. YOU GUYS. I know this may sound odd, but continuing to create new recipes and share them with you all has really been keeping me going. Iโ€™m so happy that I can help to provide a distraction for many of you. Iโ€™m also thrilled that so many of you are finding comfort in cooking and baking. It truly is amazing.

q: Best way to store a big knob if ginger?
a: I keep mine in the fridge for a few weeks. You can also cut the ginger into inch 1 inch knobs, peel, and then freeze. To use after freezing, simply grate the frozen ginger. Itโ€™s actually easier to grate frozen ginger than it is fresh.

q: Whatโ€™s one of your biggest long term professional goals?
a:

1. Growing the HBH teamโ€ฆthis has been so hard for me, but itโ€™s needed.
2. Creating an HBH show.

q: How do you clean your cast iron?
a: Ah, my most asked question! My Staub cast iron is enamel coated and does not need to be seasoned before using. I donโ€™t do anything special to clean them, thatโ€™s the beauty of cast ironโ€ฆitโ€™s easy! I simply rinse the skillet under warm water and wipe dry. If there happens to be baked-on food, Iโ€™ll rise with soapy water and use a gentle scrunch pad to release the food. Honestly, itโ€™s so easy and I donโ€™t ever stress about it.

And when I cook with seafood, I do the very same thing. But I always rinse with soapy water to ensure that I get the skillet extra clean and rid the pan of any seafood flavors.

Remember, with cast iron, every time you add oil to the pan youโ€™re essentially seasoning it at the same time. As long as youโ€™re cooking with oil, nothing should be sticking.

a: Ok, but olive oil, salt, and pepper donโ€™t count.

Blood banks around the country are concerned about a serious upcoming shortage, as scores of blood drives have had to be canceled. Though blood is not generally needed to treat symptoms of the Coronavirus, itโ€™s still needed forย everything elseย hospitals usually need blood for. There are still safe ways for people who donโ€™t believe theyโ€™ve been exposed to the virus to donate blood. Click here to learn more.

Nextdoor appโ€ฆ

Neighborhood social networking appย Nextdoor has introduced two new features, Help Maps and Groups, to give people a way to better support one another during the coronavirus outbreak. The Help Map offers a way to coordinate aid between those in need, like the elderly and at-risk, and those willing to offer some form of assistance โ€” like running errands or dropping off supplies, for example. Groups, meanwhile, allows smaller groups to network outside of the main feed.

Order takeoutโ€ฆย 

If you want to help your local economy, consider having someone else do the cooking once or twice a week. The restaurant industry is likely to be one of those hardest hit economically. Here in Colorado Uber Eats is waiving their delivery fee. Iโ€™ve read that Uber Eats is doing the same in many states around the country. Check your Uber app to see how Uber is handling deliveries in your state.

Help out your local food pantryโ€ฆย 

With virus-related closures driving many people out of work, many more families are going to need help. At the same time, demand is expected to grow and pantries are struggling with supply. Especially with shoppers buying up many of the groceries that are usually donated, such as dented cans and about-to-expire perishables.

Volunteer with Meals on Wheelsโ€ฆ

Meals on Wheels delivers meals to older people who canโ€™t leave their homes. They are anticipating an increased demand during the outbreak as we all know that seniors are especially susceptible. This is an organization that my mom and Asher volunteer with (up here it is called Mountain Meals). Unfortunately, as HBH has grown she hasnโ€™t had as much time to help out, but what a great way to contribute!
