Hi everyone! Happy Sunday!
I should be home in Colorado by now, but I’m currently writing from Italy as the snow falls heavily outside.
Our family had the best time cheering on Red as he competed in his third Olympics. This wasn’t his year, but we are so incredibly proud of him. He put down a solid run, and even when it doesn’t go exactly as planned, moments like this are still so special. We’re just grateful we got to be there together.
It’s been a busy, crazy, and full few months, so I think we’re all ready to get back into a little bit of normal life. We have a big month of work ahead for Half Baked Harvest, and after freezing our butts off these last few days, some time in Florida sounds pretty amazing right about now.
Livigno truly feels like a snow globe. It just keeps snowing and snowing, which has been the complete opposite of Colorado this year. The snow is so beautiful, and the Italian Alps are absolutely breathtaking. More than anything, I’m so thankful for this time together. You can’t replace memories like these, and I feel incredibly lucky we get to carry them with us forever.
Adjusting back into everyday life always takes a minute. I can’t believe how tricky it was to adjust to European time, and now it’s time to switch back to U.S. time! But I’m looking forward to some normalcy — and hopefully a little Florida sunshine soon. I am very ready.
Has anyone started planning any spring trips yet? Or are you staying put? I’m happy Easter is in April this year. I’m already excited to celebrate. Palm Beach will always be one of my favorite spring break spots. Or the Bahamas! So many wonderful memories.
I’m sharing some photos from our travels below. I took so many videos and not nearly enough photos! Livigno was especially snowy, so we stayed cozy inside a lot and enjoyed plenty of pizza and pasta nights. Carbonara was everyone’s favorite this trip.

It’s still a month away, but all the fun Easter decor is launching! Excited!
4. Recipes I want to make after travel to Italy.
My brother Red ordered lasagna almost every single night while we were in Italy. No matter the restaurant, it was always the best he’d ever had. I honestly had no idea he loved lasagna that much. Now it’s the first thing I want to make when I’m back in my own kitchen.
A really good, totally classic carbonara was another favorite we all kept ordering. I want to make it the traditional way — no cream, just egg yolks, pasta water, Parmesan, and Asiago.
Thin-crust pizza with cheese and pepperoni. Of course.
And fettuccine, the classic way. Butter, Parmesan, and nothing else. Simple and perfect.
